I am not known to be a cook. A baker, absolutely. But if I learn a dish that is simple, quick, healthy and tasty then my family will get it on repeat. If you can relate then this recipe is for you.
After Googling about the nutrients and health benefits of the purple cabbage I wanted to incorporated into my meals. They are also known as the red cabbage, but I think they look more purple to me? Anyway… I was impressed enough with the info to text family and friends convincing them to buy their own cabbages… I mean why didn’t anyone tell me how great they are? So if you haven’t gotten the message yet, here it is now.
Thankfully once I had my purple cabbage, my husband (the cook in our house) whipped up a slaw that I would be willing and motivated to make. It has been several months and I cannot count the amount of times that we have served this up as a side or for in bag lunches. It is also known as “purple salad” as named by our daughter.
Purple Cabbage Slaw (aka Purple Salad)
1/2 Purple Cabbage Chopped
1 Cup Shredded Carrot
1/4 Cup White Wine Vinegar
1/4 Cup Mayo (Regular, Lite, Vegenaise, etc. based on preference)
Juice from 1 Lime
A few really good shakes of Salt and Pepper
Put all of the ingredients in a big bowl, give it a good mix and enjoy. Add more of any ingredient to your taste preference.
Like I said, I like to keep my recipes real easy!
This will make approximately 8 cups of slaw and lasts a few days in the fridge. I make a second batch with the other half of the cabbage after we finish eating the first. I double the recipe when entertaining.
